    You mention “wheat undertones” in these beers but I don’t see wheat in any of your kit recipes. Am I wrong?

    Did you calibrate the Graviator? Never used one but looking at it on the net seems very similar to a Tilt.

    I don’t think three way switch is a feasible option. I think you need a double pole double throw 277v rated switch.

    pH of your starting water is generally not a factor. PH of mash is what is important. And grains generally lower the pH of the mash. Brewing software will help you understand this better.

    Final gravities in software are an estimate based upon the rang e of the yeast chosen. Based upon what you have done so far, I believe you have fermented as far as you can go with this one.

    Why is it necessary to ferment in the garage? Most ales are going to be in the 60’s. Lagers will be cooler of course.

    Cold crash will clear the seltzer if you can do that. Nutrient feeding every couple of days for the first 6 days are key to containing the sulphur.

    Wow!!!!!

    Just paid $12.99 for a 4 pack of 16 oz Weihenstephaner Helles at Whole Foods. It was excellent and worth it.
