I use k type thermocouples and they tend to get worn out at the connection to the probe itself, then it shorts out and gives sporadic numbers. I always have an extra probe on hand just in case. I suggest buy a backup probe and see if u get the same result. Inevitably your gonna need a new one...

I do 30 gallon batches and ferment in sanke kegs. I force the finished beer out with co2 after I've cold crashed for 3 days or so. The first pint goes down the drain, the rest goes through a 5 micron filter into corny kegs. Pushing it out with co2 prevents oxidation and controls the flow...

If the cooler is new just do a couple of 150 degree soaks with water and non perfumed cleaner. Rinse and repeat. You won't tell the difference between stainless and plastic.
