I made this last year and it was awesome!! This year I'm thinking of aging on rum or bourbon and oak. The flavors seem like they should compliment it well. Would probably ho very light on the liquor though. Any opinions?
I think the key really is the graham cracker flavor. I had a tincture of vanilla, candied ginger and pie spices. Although it smelled great, just wasn't 100% Pumking. After the graham cracker flavor was added...the tincture is spot on in scent. My goal is something in between Punk and Pumking...
I'd recommend 100% real maple extract. Worked very well in the secondary with a little cinnamon for a smoked porter. I wish I hadn't gone a little overboard and add a little more at bottling. I'm now letting it age a little to see if it fades back down.
