    Safale WB-06

    I'm gonna brew with two packs of WB-06 on xmas day. They say best by 05/09 but have been in stable fridge temps for the entire time. LOL My preferences lean toward clove/ester balance. So thinking 65-ish ought to work. Ideas/experiences/opinions about this yeast?

    Ahh... I guess a taste must be developed for this then. I got about 14 gal of the stuff. Overshot my gravity and still hit my numbers on the nose. That's what I get for closing up the gap after 1 1/2 years!

    will 2 liter bottles hold carbonation?

    I love my carbonator caps... Two liters are ok if you plan to kill it in one sitting but yes... will lose carbonation due to the increasing head-space. I usually use 1-liter's since I'm sure to drink that much. In fact I just carbed up some 8mo dubbel in a 1 liter and it is in the freezer...

    Insulation & Soffit vents

    Jeez... Thanks guys. Been busy. Put 20 soffit vents in on the South facing side. Made an imediate difference. Got heat-stroke nearly and drew some blood. We've been having some extreme temps here so the insulation project is on hold even though I got everything.

    Affligem Dubbel

    I've seen some nasty infections in bottles of Affligem. Huge cumulo-nimbus clouds of waving bacteria. These appear to be infection-free... And they taste great! Heineken owns the brewery. The Dubbel and Tripel are cheap for Belgian imports. Price-war anyone?
