I made my starters last night. I'm wondering why 48 hours is needed for the lacto starter while only 24 hours is needed in order to bring an entire 5 gallons down to about 3 ph.
I'm hoping about 24 hours will be ok for the lacto starter.
I only have a few brews under my belt, but I have the same kettle and I am trying to put together an E-BIAB system.
I'm wondering what prevents the bag from scorching on the element.
Is it the "Steam Tray" that ensures the bag doesn't touch the element and burn?

The wyeast package says it should be good even if it doesn't swell but I ordered it without an icepack so I'm not sure about it.
Should I try it or just go with the US-05 (which seems pretty popular for IPA)
