MaxStout, that makes perfect sense. If it is bubbling, it is escaping the wort. Sometimes the simplest things escape me. Yes, I am using a 2-micron stone. I will slow things down some and see what happens. Thanks much for your quick (and common sense) reply.

This is a full-volume mash so I will be mashing in the same strike water. The reason for the double-mash is the size of my mash tun/boil kettle. Although I suppose I could do it as you suggest and boil much longer to reduce my volume into fermenter...

Greenteaturtle, can you post a pic of your setup? Sure would like to see it. I've been brewing for 20 years and I am still on a five gallon rig. Suits me just fine...I would've gotten into a lot of trouble with a 40 gallon rig.
