    Trying two small batches of this, one with a full 60 min boil and one with a 15 min boil. Swapped out cascade for mosaic. Increased the DME quantity by about 20%. This is the 15 min boil at pitching time and at 48 hours. Here are both batches at 48 hours:

    Nice. So you're beginning your force carb at day 18 and will keep it going throughout the rest of your schedule? I was confused about your force carbing but then you also mentioned a carb stone. I've only force carb'ed in corny kegs.
