I used about 3/4 maybe a bit more of a 5oz bag. Didn't weigh it but it was a brown ale kit and it came out fine. Haven't had any gushers or bottle bombs and honestly I think the carbonation is perfect. Would that last bit have made much difference though? Probably not. But I'll never know.
Sorry to reply without an answer but I've been interested in this as well. I never thought to make the malt with them though. I thought because of their bitterness to add them to the boil with hops. Guess I should take a deeper look if most have failed.
Just starting out myself. You raise a good point about trying to duplicate results before trying the more complex. I'll take that. Extract is just so darn convenient too. Especially with limited work space.
