    I understand where you're coming from, but there are other reasons people might want to see the ingredients before they purchase a kit. I, for one, am allergic to rye and end up only purchasing those kits that I am positive will not contain it (which means I purchase very few kits from AHS)...

    Did you happen to taste it before you racked onto the strawberries? I'm wondering if this recipe has any tartness in and of itself, before the berries. Although, I see that you used a different yeast than the S-04 so yours might be a bit different anyways...

    Brewing in Texas

    Do the above, and then put a T-shirt on the fermenter and a box fan aimed at it. The T-shirt will act like a wick, and will cool as the water evaporates from it. I brew in South Texas, and the stick-on thermometer on my fermenter regularly reads ~64*F when the ambient temperature in the house...

    Day of firsts (brew and all-grain)

    Update! Today marked 10 days in the primary, and as I mentioned earlier I decided to let it sit for the 10 days (as opposed to 6 days in primary and 4 in secondary suggested by the recipe) and then taste for any off-flavors. Beer tasted great and held at 1014 FG, albeit hoppier than intended...

    If your SG was 1058 both before the boil and after, then something is definitely inaccurate in the measuring area. I would be sure to calibrate the hydrometer and always make sure to have an accurate sample to measure from.

    It depends on how many grains you're using ... Can you give some specifics? I've seen most people on HBT recommend 1-2 quarts per pound of grain ... Then you sparge until you have your desired boil volume.
