    The Brew House Oktoberfest

    How did make out with the Oktoberfest after all? I'm about start a kit now using American Ale yeast that I have harvested. I read somewhere online this yeast will help towards a more clean, crisp beer. Not going to be exactly true to the style but probably closer than using the Coopers in the kit.

    Krausen and such coming out airlock..what to do?

    Yeah just replace it with another sanitized air-lock, it will be fine. I've had to do this several times before I started using a blow off tube, like the others are suggesting.

    Does anyone have any experience with Brew House kits?

    6.5 gal (30L) bucket is what I use with the kits, but I still have to use a blow-off tube into a container of sanitized water instead of a regular air lock . Using the supplied Coopers yeast will give quite the explosive fermentation and will come out the air lock making a nice smell in the room...

    Yep, it will be bitter, especially so compared to the domestic water they call beer! I just did my first IPA, a Brewhouse kit, which I dry hopped using Fuggles. The beer has mellowed after 3 weeks, noticably less "grapefruit taste", but still quite more bitter than any other beer I have brewed...

    Another vanilla bean thread!

    Can't help with the quantity question, but if you need to buy vanilla beans in larger quantities check Ebay. I bought 30 Madagascar beans for $8 including shipping from France. They were dryer than ones bought locally, but my wife uses them to make vanilla extract and they are great for that.
