    I believe it is ensure complete conversion. If you are getting that kind of predictable result a 60 min mash should be fine.

    I would personally leave it in secondary at the same temp for at least a week to let it clean up. Then take a sample in a week and check the gravity, cool and taste. Hopefully the flavor has mellowed a little bit. If not wait another week.

    how long was it in the primary for? I have had some real strong ester production from that yeast when I have fermented warm, mostly got cleaned up during the conditioning phase for me.

    +1 great divide and falling rock. call Argonaut first, save you a trip although the cheeky monk is just a couple blocks from there. Awesome belgium beers on tap. enjoy.

    Colorado Malting Pale

    Has anyone used this to make an English style bitter or IPA? My concern it that is might lack some of the biscuit malt flavour of the crisp marris otter. I have some and wondering where it will go. Thanks, Brian
