With my uds I rarely ever have to add coal. I can fill my basket and easily get a 12 hour smoke. In the rare chances I do add I just set the grill grate in my webber and dump some in. The whole process takes about two minutes.
I vote for the uds. Huge capacity with a small foot print. Another advantage is you can upgrade/ modify as you go. Minimal investment to get you off and running. Here is mine

I am no professional by any means, that being said here is my opinion. I like to let my sparge water sit for 10 minutes even though it's not necessary. The conversion is complete and all your doing is rinsing the grain as you said. I treat my batch sparge just like I do with my first rubbings...
Ok I harvested my first year bounty (loose term) now what? I cut my bines back to about 2' or so and my question is... Do I need to keep watering them until I cut them all the way back? We are in a serious drought here in CA and would like to help where I can.
