    I set my grain mill over my kettle on some 2x4s and crush directly into the mash water, giving it a bit of a stir every couple of pounds or so. 84% brewhouse efficiency. And less work. Mostly the "less work" part.

    Westvleteren fast finish?

    The Westmalle strain does relatively fast. I'm looking over my tilt data and it hit terminal FG in ~6 days for me, from 1.090 to 1.009. That being said, I did let it sit in primary for a 3 weeks and secondary for another 4 before adding yeast and bottling.

    Favorite immersion wort chiller (5 gallon batches)?

    Overthinking it. Buy a Jaded Hydra and call it a day. It will chill to within a couple of degrees of incoming water in less than 10 minutes, so unless you live in the Southern US or other place with warm tap water, it is more than sufficient. It's also built like a tank.

    The tubes are all soldered together. Also, the top bit of coils are above the wort line in my keggle on a 5g batch, or just about, and it doesn't seem to hurt anything.
