First Time Cider In Secondary Finally

Just racked to Secondary from bucket primary's. Started with 17 Gal. fresh press no past no pres. With the exception of the little guy.. that's the wild experiment. We treated with camden to spec. for 24 hours before pitching Wyeast Cider Mead Yeast in each 72 degrees. From the left...

    First IPA

Sampled one today after only 7 days in the bottle it turned out amazing. Mango nose with a bitter start and spicy crisp finish. I compare it to Fat Heads - Head Hunter less grapefruit more mango. 9.2 abv Next time it's going in a barrel.

    Cooling paddles

I use the 128oz ice wand. I start with an ice bath then slowly penetrate the wort with my huge wand. I gently move it around clockwise and change directions intermittently. I usually come in 30-35 min. to 70o. This is the only technique I've used. When doing IPA's I use my wand to crush the hop...

How would you prepare the berries before adding?

    Tripel Raspberry

Started drinking our first triple today and it turned out really well. Friends said it was like a creamy banana shake. I was thinking about doing the same recipe again but integrating some fresh raspberry puree into primary. I have not researched fruit ales yet. Should this work and if so how...

    aging Belgians

Just bottled my first tripel today. Really happy with the nose and flavor of banana bubble gum. ABV was only 7.5 though. Hoping it will pick up another % in the bottle. Not sure about how pumped I am about the priming sugar in the kits. I would prefer it to be really effervescent. Wish I would...

    First IPA

Thanks, I was not sure about the hallertauer. Sounds like it will pair well. I know I want to dry hop with the citra. Where in this kit schedule would you recommend adding 1oz. EKG and 1oz. Hallertauer?

Thanks... I also have 1oz. of hallertau leaf. Should I utlize that in some way or will that be too much? If so when and where? I'm not sure how they will work together.

    First IPA

Hello, I'm still on the kits but want to get more creative. I've done a Oktoberfest, Tripel, and RIS so far. I ordered a IPA kit from brewers best as well as 1oz. of EKG and 1oz. of Citra leaf. I planned on doing the kit to speck only adding the EKG for the final 10min. of boil and adding the...
