    Quick sour & brett question

WLP650, 'Witty' as in very fruity, not so spicy. It felt almost oily.

    Quick sour & brett question

Gotya. I expected a slight amount, but I am in no way dissapointed. Grain bill was 2/3 pilsner malt, 1/3 wheat (unmalted) so, technically I made a Brett wit ;) I want to try brett in some of my 'standard' recipes, to see what it does to them. Can I expect the same amount of 'witty' taste...

    Quick sour & brett question

Ok, we had a good one with both cornys, wow! WLP 655 (sour mix) (8 months in) were down to 1.010 (from 1.057). Distinct sourness, but overwhelming barnyard. Already very drinkable, but I'll try to restrain myself to see where it goes. Also, I need to empty out some of the beer as I plan to...

    Quick sour & brett question

I get that, and I'll do it. Question was for approx. times (carrying kegs down all the time becomes tiresome if I 'know' that it should be left for at least 12 months :)

    Quick sour & brett question

Perfect, thanks! I'll bring 2 kegs down tomorrow and I'm having a friend over for testing. I'll do the gravity then too. Again, thanks for the answer! :)

    Quick sour & brett question

Hey y'all, Got 4 corny kegs in the attic enjoying themselves, 3 with WLP 655 (sour mix), and one with WLP650 (Brett Brux). Without checking the FG (I know, it's the way to go), how long should I 'expect' for them to finish their work? I realize that it's not an exact science, but a...

Sugar priming in a one-use keg, pressure issues

Thank you all for your replies! It's a 30-liter keg, but no pressure relief valve. I am fully aware that 4 bar is alot of pressure and I don't want to get near that point. I'll try using half of what I usually use, see where it ends up. :)

Sugar priming in a one-use keg, pressure issues

Sorry if I'm not explaining my problem well enough. In short I want to avoid getting the keg over 4 bar pressure, so I need to know how much sugar to use, but at the same time taking into account the FG. Let's say the FG is 1.014, I'm fairly sure the fermentation is finished, but I want to...

Sugar priming in a one-use keg, pressure issues

Hi all, I'm about to experiment with a Petainer one-use keg, and to keep costs down (and also because I find it more facinating) I want to prime the keg with sugar and let the beer do it's business. My question is this, the kegs can take 4 bars of pressure so I want to be able to determine...

First go at a 'wild' brew, feedback needed :)

Thanks Matt, and good luck with yours as well. Ideally I would ferment in a see-through container but storage is an issue (read: wife does not want me to place 3-4 buckets under the sink in the bathroom for 2 years). I might make a 'display' batch in a 1gal-glass container so that I may...
