Columbus and Simcoe are a great combo.

I planted back in the end of April. 7 of 8 have sprouted and grown quite a bit. One got dug up by an animal, so I doubt its going to make it.

I had the deconstructed Simcoe and Zeus at Beer Summit. I like the Latitude 48 IPA because of the bold hoppy flavor but they didn't over do the aroma, and really focused on the flavors. I think its a great idea for IPA lovers.

Well, the worst case scenario, is you have better beer than Budweiser, Miller or Coors. There is a lot of math that goes into Mash and Sparge water volume numbers that you can check, if you are boiling down to 5.5, then that may be part of the issue. You can really go for 7 or 6.5 down to 5.5, 8...

It may just be a matter of letting it mello for a bit, then dry hopping to mask a little. Are you kegging or bottling? Kegging should allow you a little more mello time while you carb slowly, maybe another 2 weeks or so. It depends now on your fermentation temps while you dry hop too. I'd ask...

For 15lbs, I'm amazed your OG wasn't higher. I did a 17 lb IIPA and had a 1.079 OG, 1.021 FG. How much of the juice did you try and extract from the bag (if you BIABed)? Maybe your water levels for the mash and sparge could be tweaked. The Hops schedule is completely up to personal preferences...

They say the hop balls hold an oz, but as the previous guy stated they become so packed that the oils inside can barely get out. I'd try the 1/2 oz technique and use 2 hop balls. Temp might also have something to do with it. The lower temperatures normally make it take longer for the hops to...

Dry hopped with chinook leaves, beers still aging but the aroma is great and it tasted good uncarbed and a little young.

Made a IIPA with 15 lb 2 row, 2 lb crystal 60L. Just kegged it today, tasted exactly how I hopped...I mean hoped.

I thought I was crazy for my IIPA 1.081 OG 8% abv, but this is a whole other level.
