    We had an amazing blackberry season here in Squamish, BC. Not sure if the rhubarb was too woody.

    Store bought apple juice with 10lbs of rhubarb or blackberries. Fermented for 2 weeks, then into secondary and topped up with juice for another 2 weeks. Bottles and planning on aging for 10months.

    Started 2 batches today. 10lbs of chopped frozen rhubarb topped up with store bought apple juice. Lalvin EC-1118. Also a batch with 10lbs of frozen blackberries. I'll leave for a month, then bottle condition for 10months.

    Hi, I have a seriously simple and reliably fast recipe. Just juice, black tea, & yeast. To make it a bit more farmhouse-like i would have 30g of either white american or dark french oak chips for a week in secondary. https://www.homebrewtalk.com/showthread.php?t=544345

    Surprisingly good. I back sweetened during bottle conditioning with a tsp/ltr of truvia. It was a little too sweet for me. I will halve the truvia next time. But really great flavour. The blueberry one was also really great with a little back sweetening.

    Currently have a 5 gallon blackberry/ginger/lemongrass batch and a rose hip/maple syrup batch. I'm thinking of a Thai basil, ginger & juniper batch too.

    Dry Hopping

    I've used an Australian hops, Helga, in pellet form. I add to the secondary for 7 days. Look for aroma hops, not bittering hops. Aroma hops have higher percentages of beta acids, while bittering hops have higher alpha acids. I've got a hopped apricot apple cider on the go. Bottling this weekend...

    Thanks for the recipe. I'm brewing an apricot hopped cider at the moment and will be adding some coriander seeds too. Also have a batch of ginger cider with coriander seeds.

    5 gallons, 3 ciders: help me strategize!

    I'd love to know how the apricot cider turned out. I'm making a 5 gallon batch with 1lb of dried, frozen apricots. Also 2l of apricot juice boiled down to 1 liter concentrate. I will add Helga hops to this.

    That's what I've read too, 2oz/gallon. I just grated and froze for 24hr. I've got the ginger in the carboy at the moment. I plan on ageing 2 months before drinking. I quite like a strong ginger hit
