    Is my yeast dead?

It kicked off...or at least started bubbling out the blow off tube at about 18 hours and os now chugging away. I think I will invest in a stir plate, start making starters and start washing some yeast in the near future. Funny..I told my wife o could probably make a stir plate out of a "toy" she...

    Slow start

Mine started kicking out some CO2system out of the blow off tube after 18 hours. It's going good now. Does a slow start and stressed yeast cause off flavors? I know the possibility for under-attenuation exists because of my not using a starter. Just curious. Also, I have heard pitching too much...

    Slow start

Funny, I am having the same issue with the same exact yeast. See my post above yours. Not sure if that is typical of 001 or we got some bad stuff. I am going to give it a day or two and if its not kicked off I guess I will re-pitch another vial that I will purchase from a different store. I have...

    Is my yeast dead?

Pitched a vial of WLP 001 Californian Ale yeast into a 5 gal batch of brown ale I made last night. Pitched at 67 degrees and set it at 68. Took a look at it this morning (12 hours later) and no activity, plus all the yeast appears to be at the bottom of my fermentor. I also noticed when I...

    Overshooting single infusion Mash temp

Just made a stout last weekend and over shot my strike temp/mash temp by 5 degrees and was at 161. Just wondering if anyone has ever done this and what the effect was on the final product. I remember reading that at the upper temp range it can cause less fermentables and result in a sweeter...

Did my yeast get too cold and head south for the winter?

Thanks for the words. Yeah, I jumped the gun opening one early. My last batch over carbonated in only a week so I got a little curious about where this one was in one week. I had never tried cold crashing before, so thought I would try it. I couldn't get back to the beer for a week so that's...

Did my yeast get too cold and head south for the winter?

So I have a batch of brown porter that I put into secondary and decided to drop the temp down to 45 degrees during the second week in secondary. I bottled it (2.2 gallons) with a 1/4 cup of corn sugar, and it has been stored at 70 degrees for the past week. By my calculations this should have...

suspicious white spots on top of beer in primary

Yes does have some normal looking bubbles around the wood, but the white spots are located in the upper right hand corner if photo. I have seen yeast plumes before and these don't look like them. Guess I will just ride it out and see what happens. Also, I was going to drop the temperature down...

suspicious white spots on top of beer in primary

Meant to say Secondary, not "Primary" in my title of thread..just to clarify. Made a batch of all grain porter and split the batch into two different carboys for secondary. The first batch I added a coffee toddy and the second one I added toasted oak cubes that I soaked in some port overnight...
