I am also interested in doing this kit but was thinking 3 weeks in a primary, no secondary, and letting them age in the bottles. Is this not a good idea? I only have 1 fermenter and don't want it tied up for months.

Yes I want to keep it an IPA. I checked my LHBS website and they are currently out of simcoe and Amarillo but they do have centennial and cascade, so that's what I'm going to get. How much and at what time in the boil should I add them?
