    beer kits

    i think the temperature was better than any of the other batches. i used the good sugar from the brew supply store. the owner of a wine store said that the kits always taste 'funny'.

    looks like those styrofoam packing bits to me. did you boil the dried extract so it all dissolved? it does look scary. wonder what it is. maybe you should call in the hasmat team!

    Bottling question

    the bottles are the best. plastic has synthetic estrogens where parts per billion have very strong bad effects. do you want your nuts to shrivel up and fall off? i don't know why you would have a concern about the grolsch bottles. they are around 3 bucks each arent they?

    i have only made about 7 batches. starts at 1.045 and finishes at 1.010. that is about 4.4% i think. store bought beer up here in canada is 5%. i just use malts and 1 cup sugar to prime. can you make a strong beer like that without aerating?

    #1 is pilsner urquell. keiths india pale ale and moosehead are very good to.

    Bottle Sanitizing

    i bake. i turn thermostat to 500 and quit when temperature hits about 400f. takes about 20 minutes to cool for bottling. don't ever worry about funny tastes from sanitizer chemicals.

    something i do that may effect the equation. i use grolsch swing top bottles. i separate the swing top from the gasket and wash in very soapy water and then let dry in a steel mesh strainer for at least a day. i take heed of the fact that moisture breeds bacteria.

    i have yet to taste an infected beer. many years ago i tried to make a batch, sterilized and rinsed everything carefully. two things i) it tasted lousy ii) i swear there was a sulphur taste and i think it was from the sterilizing chemicals. so in that case i was one for one and never brewed...
