    I would check this thread out, if you haven't already. I followed it to pasteurize some rice wine that I wanted to stay sweet. It also talks about back sweetening, letting it ferment until carbed, then pasteurizing in the bottle to keep the bubbles, keep the sweetness, and stop the fermentation...

    Pump size for chiller recirculation?

    I use one of these: http://www.attwoodmarine.com/store/product/t500-500gph-12-volt I can run it off a battery or an AC/DC converter. I used a rubbermaid tub filled with ice water to cool ~12 gallons of wort from boil to 65 in ~20 min. I can hook my cooler to the garden hose or the pump...

    I brewed this recipe up a few weeks ago. I used flaked corn and rice and used the BIAB method. This was my first all grain batch. I got a surprising 1.053 OG (11.5 gallon final volume) and today I got a 1.010 FG after 23 days in fermentation. So this should be a 5.64% ABV light beer! Loved...
