Howdy. Not super active on the forums, but I'll join in. Currently a Hattiesburg brewer, but should be back home in Pike County by the summer. I first brewed a few kit batches with a buddy about 15 years ago but it never took off. I started back brewing in 2008 and it's been downhill ever since...
I personnaly didn't notice cloves when I sampled my beer. I did ferment at room temp, so I expected some esters, but the judges clove comment caught me off guard. US05 is one of my go-to yeasts.
I just got my score sheets back from a homebrew contest held today, and my pale ale fermented with US05 was marked by one judge as "spicy, earthy clove, weizen smell".
I was kind of shocked actually. I hadn't noticed it before.
Right. I reckon I'm just having second thoughts on the D47 due to a recent stopped ferment on a sasafrass mead I just did. It was a dead stop. Vigorous initial fermentation, then blam. Nada. I tried several techniques and nothing. Just left it as it and racked to secondary. It should be fine...
@ commonsenseman - I'm not a braggot expert either. I love drinking them though... ;)
As for the recipe, yeah, I'm shooting big. I've worked several different brews up to comparable alcohol levels and they've all turned out pretty good. This braggot would be the most volume of high ABV stuff...

I did this very same thing yesterday... Looking forward to the results. The lag time was a big long, but this morning, there was a nice thick head of krausen.
The BW had a nice tartness to it. I'm hoping it will develop more in the bottle. We'll see how the gose turns out.
