I bottled it today, and sampled half a glass with my wife and it tastes great already! With no aging! I brewed 2.5 gallons of it, and here is the recipe if anyone would like to try it or modify it. 2.5 Gallons of water 4 bottles of honey (32oz.) 1 "bunch" of miniature red bananas Fleischmanns...

OK cool. I read through the thread and added 2 more frozen/mashed bananas. The mead is actively fermenting right now, so I will try to top it up tonight before it stops. Thanks again.

wow lots of info! so you think i have enough time to wait for the weekend before i top it off? the bananas seemed to spark another fermentation, so am i correct to assume that oxidation and fermentation will not take place simultaneously? thanks!

Thanks for the reply. How much time is "a long time" to clear? And yes I think bananas and honey are a great pair! So from the ingredients you think this might be a bit dry? Thanks again.

Thats cool. I have never entered a competition, I just like to make good tasting beer for less money than average store bought beer. I don't have the room for a lot of equpment in my current home. For things like wort chillers or anything like that. Maybe once the housing market...

I know I am new to homebrewing, and to this forum, and maybe the veterans will change my mind....So try not to flame me too bad.... Is there anyone that actually PREFERS their beer a bit cloudy? I know...I'm strange. There is something nice about a crystal clear glass of beer bubbling...

I say head out to the store for some Russian Imperial Stout...any variety should wash away the sorrow!!! Unless of course, you have some homebrew laying around...
