Artifishal, where did you get your polycarbonate lid and silicone gasket from post 18/19? I've been looking online and can't find anything as substantial as yours. Thanks!
Hey Mike,
I usually brew a Strawberry Rhubarb saison during summer and I generally just buy the deepest red rhubarb I can find (I've yet to find it growing down here like it does up north), cut it into small quarter pieces, freeze it for a day or two then thaw in the fridge then rack on top...

Welcome to the area! HomebrewHQ is where I always go. They have a pretty good selection and are very friendly. If you're ever out near Ft. Worth, Stubby's is decent. Most the liquor stores around here will swap 5# tanks if you keg. There's a shop I go to in Grapevine (I'm sure I'm over paying)...

If you do make it out to Fort Worth you should check out The Collective Brewing Project. They have some good stuff on right now.

Peticolas, in Dallas Design District would be my go to but they only tour on the 1st and 3rd Saturday. You could always do a lot down...

Should take around 11.78 gallons of space or around 47 quarts if you use a cooler instead.
Like mentioned earlier, 13-13.5 pre-boil is completely manageable with a little babysitting.
