    Hey Mike, I usually brew a Strawberry Rhubarb saison during summer and I generally just buy the deepest red rhubarb I can find (I've yet to find it growing down here like it does up north), cut it into small quarter pieces, freeze it for a day or two then thaw in the fridge then rack on top...

    Just moved to Dallas area

    Welcome to the area! HomebrewHQ is where I always go. They have a pretty good selection and are very friendly. If you're ever out near Ft. Worth, Stubby's is decent. Most the liquor stores around here will swap 5# tanks if you keg. There's a shop I go to in Grapevine (I'm sure I'm over paying)...

    Do you stir when fining w/ gelatin

    If I add any finings, I usually add them on the way down, mid crash, and just give a couple gentle rocks back and forth to the carboy. No ill effects yet.

    Scroll down to "Can I Mash It?" http://www.rackers.org/calcs.shtml Should take around 11.78 gallons of space or around 47 quarts if you use a cooler instead. Like mentioned earlier, 13-13.5 pre-boil is completely manageable with a little babysitting.
