    What is the consequence of overpitch in Belgian yeast ?

    BY "stressing" the yeast, underpitch, high temps etc.. you can get some more of the phenolics that are part of the character in may belgian styles. by over pitching you may not get these characteristics in as pronounced manner. All depends on what you are looking for.
