    So if i let my brew sit in secondary for about a month, does the aging process start there or does it still start after bottling??

    I have two beers going one with a 1.062(Safale us-04) and one with a 1.055(Safale us-05) OG. Its been just under a month now and im still getting bubbles out of their secondary airlocs. About how long can i expect these beers to take to ferment??

    I just made a rooibos kolsch. Steeped about 2 oz in the last of the boil, and im going to steep more before i bottle to have it pack a bigger punch, i'll let you know how it turns out.
