    Is my mead safe?

    Bulk aging is not an issue, which is what you've done. Done it many times myself no issues. I would definitely try it. Mead tends to gets better with age in most cases. If you like what you taste, get it bottles. Good luck, let us know.

    Fixing an overly sweet kolsch?

    Used K-II a couple times and didn't have an issue with it, but...... As stated, dump some us-05 & warm it up. If that doesn't work, must have been another issue in the brew day. I screw something up every brew it just a matter of identifying & finding where I did it. Good luck, hate the it...

    What a great couple of beers. Haven't had these in a few years. Pre-pandemic these used to be a little over a $1 a bottle in NY. That Baltic Porter is like 8%. The pils is closer to Czech then a German.

    Brewing Rut, how do you deal?

    Our club helps with being in a rut. We do the wheel of beer each quarter. Spin the wheel for the category number, spin it again for the subcategory letter. Whoever wants to join in brings their beers to the meeting a quarter out and everyone judges them. Not BJCP forms judging and such, but...

    Caramunich in a marzen?

    Love Avangard, great malt. Make sure you use continential malts. I find most US malts, especially Vienna are quite a bit different especially when used in large %'s. I use equal parts Pils, Munich II, equal parts (5-10%) caramunich and Vienna. Love that your going to do a decoction.
