    Yeah, I don't see why not. As long as it hasn't been tapped and it remains cool you shouldn't have any problems with keeping it for another few weeks.

    So you're looking for an exact FG that you're shooting for? I found that staight cider without any sugar added gave me a 7.5%. It went from 11 Brix to 2.5 which gave me 7.0% on a 5ga batch I added 5# of sugar and got it back up to 11 Brix again.

    Depending on if you want there to be the fruity esters or not. Warmer fermentation temp will add to the bananna flavor, cooler like you have it will add the the clove note.

    Brewing in Basement

    I live in Albany NY, I brew on my back porch every winter. I open the windows and we haven't had a problem with CO yet (I'm still alive). If you have enough ventilation and the fire extinguisher, I'd go for it. If you really want to be safe, get a CO detector and put it next to where you're brewing.
