Took a quick sample cut out of the top. I guess I may be going through more dremel blades than I thought, this plastic is a good half-inch thick. I think the earlier idea of just cutting the circle out of the plastic and then cutting the steel a quarter inch in or so is the best idea. An angle...
oh so the handles are entirely plastic? i thought everything was metal just with a thin plastic coating... interesting. i'll try using an exacto knife or razor blade to cut off a big circle of plastic on the top.

I'm on my first batch and I'm 4 days in and there is still little to no airlock activity, but I took a sample out yesterday and checked the gravity and it has definitely gone down so I'm optimistic.
I've been buying Howe Sound beer for the last couple of weeks with it in mind to use them for bottling my first batch. Good to know about the bottles in Squamish.
I'm a newbie as well so don't take mine as the final word, but I believe it just means you'll end up with weaker beer. Probably not worth dumping, it might taste a bit watery and not be as high gravity as you want, but you can always argue that it's "healthier".
