Luckily I have two LHBS within 30 min. I went to a different one today to pick up the extra DME I needed. He seemed to have a much larger inventory. May give them a try for my next batch.

I assume he was low on the original DME, but he could have just said that. Instead he tells me "we're going to take a different route". I thought the LME/DME combo was going to give the same result.

Thanks guys. Going to get two more pounds of extra light tomorrow.

For my first batch my LHBS gave me 7lbs of extra light dme + 1.5 of caramel/crystal grains. Which would give an OG of 1.063. I went back get the same recipe because it was good and I made a few mistakes and thought it would be even better. Well this time he gives me 3lbs plain light dme and 3.3...

Could be ok. Air lock is a small hole and the beer is still producing some co2. It may be enough to keep the air out.
