When you place the carboy in the fridge do you put a stopper that has a hole in it on the top or can I put the cap back on the 1 gallon bottle I bought at the store and not worry about an explosion?
Once it cold crashes can I leave it in the 1 gallon carboy and add malic acid etc. then enjoy...
I have six one gallons of cider that I have racked 2 or 3 times since January. There is now very little on the bottom of the carboys.

What do you do with the couple inches of juice that is left over from the primary stage that has some juice and mostly lee's ( I think they are called)?
I'm working on two 1 gallon batches. I just racked them and have a bit of space between the juice and the lid.
