Typically I dont start til mash in. Only ever had a problem once and that time I was drinking before I even started heating strike water. Not my best performance
Mine was an oddball. Friend of mine got ahold of some Fraoch Heather Ale. No idea where he got it but I loved it right off and it turned into my basement and spare bedroom being filled with beer stuff.
I got a 10 gal aluminum pot on amazon for $36. The best deal I could find and worth every penny.
Edit: it was $36.98. Search "Winware aluminum 40 qt pot"
Just go for it. BIAB if that fits your fancy or cooler/mash tun if you like DIY type stuff. All the equipment can be found reasonable if you search around and its really not difficult. I only did two partial mashes before going all grain, and my end product improved immediately!
Go forth and brew.
Its been 3 weeks in basement ill probly bottle it whenever I get a chance. Considered moving it upstairs for a few days (warmer) just to give the yeasties a chance to clean up, but judging by the taste I dont think its really necessary.
FWIW - I had a few Franziskaner Dunkelweiss' that I forgot I had, and at over 3 yrs old there was no missing the esters. Im probly not a great judge but I thought it was still great beer
Your post prompted me to do a little research...and im sure glad! Turns out my themocouple probe isnt meant for immersion. My last 2 brews are coming up really thin and im betting this is why. Good post!
