on a semi-related note i was told that the human palate cannot distinguish over a certain IBU.... is this true?

its my dads birthday on super bowl sunday so i got him some beers to put together a little package for him. he loves hoppy beers and has quite a palate for pairing with food and likes trying new things. There are a lot of IPA's because i was making him an IPA for his birthday but its not ready...
did i just create a new step in the brewing process?

i was worried about possible contamination after reading a few threads about dry hopping, something about the alcohol from the fermentation keeping any bacteria on the hops in check.
i guess ill give it a taste in a few days
i just finished my first beer calling for dry hopping. piss poor instructions paired with poor research by myself ended up with me putting the dry hops in at the same time as the yeast, just after the wort cooled and poured into the primary. i now know i should have waited for the first few...
