    10 gal takes me between 5-6 hours. I use a herms system, two pumps, tune in tube he, conical. Used to batch sparge 5 gal, still took about 4-5 hours. 1-2 extra hours for 5 more gal was worth it.

    There are services where you can send the brew and have it analyzed. Maybe that can yield a clue. I think white lab dies it.

    That is odd. I use pbw first and a star san rinse. I have filled kegs on star san foam and had no issues. You clean all the ball lock connectors? You can take them apart, you probably know that.. Sounds like to much AA . Maybe let it condition for a week or two.

    Lots of good stuff. Its all about the yeast. I always make a starter, and i love using dry yeast. I have been rehydrating with go-ferm. Works great. Healthy yeast=great beer.

    Belgian Saison. The Dupont strain does not mind the heat. In fact some strains will poop out when about 75% done, then wake up a couple weeks later to finish the job. I just did one, primary ferm at about 80, then let sit in hot summer garage for a few weeks. Got up to 90-95. Turned out awesome.
