    Yeast Genetic Reasearch

I think where I would like to take this is to get the training and education to allow me to better understand this topic. Then, in the future, potentially take my skills to a craft brewery or a yeast lab like white labs. I would love to see a shift in emphasis onto yeast in brewing and remind...

    Yeast Genetic Reasearch

I just sent an email to white labs, and I have already met with my advisor. There is one huge glaring problem with my department, all of the teachers do large research projects, which takes their attention. They also serve as advisors, and are not really willing to do much research to help me...

    Yeast Genetic Reasearch

Hey guys! I am getting ready to graduate with my degree in cell and molecular biology, and I'm looking towards my future. I am currently trying to get a job at a local craft brewery in their lab doing quality control, but I'm also thinking about graduate school. I have a huge interest in yeast...

    Carbonation Ruined My Beer

Well crap. Any chance in hell this might all work out? I mean the nose is still consistent with what it used to be and the initial flavor is still on. Could the yeast just be overly active at this point? I know its not oxydized because Ive seen that happen before, it really changes the profile...

    Carbonation Ruined My Beer

Ok, So I made a IIPA. Everything went well. 10% abv ~63 IBU- Lots of Dry Hopping I primed it once initially with 2.5 vols of CO2 using corn sugar. The carbonation did not come out though I poured a tester glass to see how it was coming, and it tasted wonderful. Lots of citrus notes good...

    Hopslam clone

Two weeks post bottling, I found my bottles to be weakly carbonated and a little sweet, I assumed this to be due to my yeast being dead. I re-pitch into the bottles which gave off a crazy foaming reaction. They are sealed and ready to go. I assume they will be ready to drink by this or next...

    Hopslam clone

Hey guys, just finished bottling and everything went to plan. Had around 5 gallons after dry hopping and added around 4.8 oz of corn sugar for priming. It smelled heavenly, and the taste was a spicy peppery that i did not expect, but IM am looking forward to seeing how it a lll develops! Took...

The clarity is looking pretty good based upon that flash light test. Im hoping it is crystal clear, but i forgot to use irish moss in my boil... whoops. But dry hop is successful. Gonna have to be really careful siphoning so I dont suck any hop particles up and end up bottling it. I also still...
