    Never had an issue with 5lb propane tank freezing and have done at least 15 brews at least 10 gallons on the banjo but I don't run the burner at full bore, totally not necessary... At what point during your brew are you running into a freeze?

    Cool! I would swap the ale pail for an insulated cooler if you could as it will hold the temp much better. When I first started all grain I used a home depot 10 gallon cooler and that thing held its temp really well and was like $40...

    Day 13 Update: I tasted the fermented sweet tea today and it is still very sweet. It has a mild tartness and bite to it, almost like a cider. I am going to let it ferment for 2 weeks more and dry out a bit.

    You wont be disappointed and you should be happily surprised at how powerful the burners really are. Only downside is that it uses a lot of gas. I believe I can get through two 10 gallon batches on a 5 lb propane tank, not terrible but if you have natural gas available you might explore that...

    Day 5 update: I checked the jug today and it has a noticable amount of trub at the bottom and a discernable frothy krausen along the top. I don't detect any more bready aroma and fermentation seems to have slowed down as there is not much carbonation built up. So far so good...

    Advice for a newbie please!

    Hard to tell from the pic, could be spice or trub that got kicked to the surface and not necessarily an infection. Just let the beer run its course and see how it turns out. Best of luck!
