    My first Scotch Ale

I added some coriander because one of my favorites ( Traquair Jacobite Scotch Ale ) is brewed with it. I'll take the advice on the Chinook and go with Willamette's. I have extra's of those lying around in the freezer. Why the long boil? Just curious as I already seem to lose a lot of wort...

    coriander problem

So, when using coriander in beer, is it necessary to grind it? Of can you just add the seeds?

    Dry hop bags or overcarbed?

I knew I'd forget to add a few details. Once I took it off the gas at 30 psi, I bled the keg about once a day for the next week. You're right though, just taking it off the gas wouldn't decrease the carbonation. I believe I should have bled it more than once a day, but it wasn't really hissing...

    Dry hop bags or overcarbed?

I dry hopped an IIPA in the keg over a month ago. I planned on force carbing and left it at 30 psi for 3 days. It seemed way overcarbed, so I took it off the gas and let it sit a week. No big deal, as I wanted it to soak up some of that Citra yumminess. Anyway, after sitting for a week I...

What did you bottle / Keg today?

I did this last Saturday, but since I just found this thread..... My attempt to clone a Southern Tier Choklat. Bottled it so that I can age it without using up a keg and I can enter it in a contest in August.

Is this better or worse than Craigtube?

This is far worse than Craigtube. I love his stuff. The dude loves beer, music and food and he shows it in his video's. The above video is a poorly edited piece of crap.

How much cocoa to add to oatmeal stout?

Since I'm working towards a Southern Tier Choklat clone, how distinct would you say this is? I have read the Choklat threads, but there wasn't much in the way of positive results. So would you say this is choklaty like the Choklat or just a nice smooth chocolate flavor?

    Pushed stopper through

Same thing happened to me on my first beer. I left it in there until I transferred to the secondary. I had to fish it out with a coat-hanger but the beer turned out superb. As long as you sanitized the stopper, you're fine.

Have you found "The" beer to end all beers

Since Ninkasi has started making 6 packs of Total Domination, I'm going to be buying a lot more of that than anything else right now. I also fall back on SNPA quite regularly. I only ever buy that if I have nothing in the kegerator anymore though.
