I just have a quick stupid question regarding the spunding valve. So you set your desired psi level and the spunding valve will automatically release the pressure once it gets in excess? Or do you have to manually release the excess pressure? Thanks

When I went to Home Depot they basically told me they couldn't recommend anything due to liability issues so they recommended me to look online. I could probably get the black-pipe from HD and gas valves. But the lines from the black pipe to the burners I probably need to get online.

I think he is referring to stirring the partial mash boil when you add the extract portion to the boil so it doesn't sink to the bottom and scorch. Since there's no extract in all grain you don't need to stir unless some of your hops get stuck to the side of your kettle.
Given your circumstances, sounds like you have the right idea. If the room stays around 67 then it might be a good idea to put it in water and monitor the temp if you can. If you can't go by your parents regularly then it will be difficult but as long as you can monitor the fermenting temp...
