What are the drawbacks to over pitching yeast in mead? Does the yeast determine whether the mead will be dry or sweet?

Another thing about this kit is it didn't come with any type of clarifier. Is that not really required or should I got run to my LHBS and pick some up? And is Irish moss flakes better than the tabs or vice versa?

Thanks for the help. So just to comfirm, fermentation temps vary by the type of yeast not by the ingredients in the beer? Sorry I'm a true beginner.

So I just got this kit in the mail and I can't find anything about fermentation temperatures in the directions. I know a pilsner is by definition a lager so it would generally have lower ferment temps but I was wondering if this is one of those kits that's actually more of an ale with pilsner...
