I'm trying to design a clone of Fernie's Big Caboose Red Ale, mostly just out of curiosity/education. I love this beer, and since they list the ingredients on the site (thanks!), I thought it would be cool to see how it all comes together...
I used 6 ounces of hops instead of the 5 ounces listed. I think I just spread that extra ounce in the later hop addition stages. It seems nicely hoppy, but definitely not a "knock you down" level.
Moved from St. John's, NL to Calgary a few years ago and have been happily brewing here. As far as I know, there was nowhere to buy all grain supplies in NL and the craft beer scene there was very limited/government controlled. It looks like things have really been turning around since I left...
I brewed this recipe 5 weeks ago (3 in fermenter, 2 in bottles so far). I think I added a little more hops than the recipe asked for, and I added a little baggie of cacao nibs in secondary.
Even though the beer is still a little young, it tastes unbelievably good. Maybe the best beer I've made...
I brewed this recipe at the beginning of the Summer and am just finishing drinking the last few bottles.
Not being overly familiar with the style, it seemed like a fun experiment. Can't say I was a huge fan. I'm not sure if I did something wrong, but this was definitely not a favourite of mine...
I made this one a few months ago. It was unbelievably good and just keeps getting better as it sits in the bottles.

I used this recipe for a kettle sour. I think I kept the hops the same as in the recipe.
To sour, I mashed and sparged normally, then when the wort was collected in my kettle, I added a few tablespoons of 0% probiotic Yogurt (Biobest I believe) and let it sit on my kitchen stove...
I used this recipe as the base for a kettle sour using yogurt. It's VERY good based on what I've tasted so far in the fermenter after two weeks. I think I will try a normal version of this one next weekend. Thanks for sharing!
This is my first post, and this recipe was my first all grain brew.
All I can say is WOW.
My other brews have been good, but this one was unbelievable. The worst part about this recipe is how quickly the bottles are going empty :mug:
