    Yet another bottle carbing question.....

    How did the yeast experiment go? Did adding new yeast to those two bottles improve carbonation when the beer is cold? I have a beer that is not well carbed, after refrigerating, when it certainly should be. I will have to check to see if the warm bottles are carbed at all.

    Looks like a good recipe, I have one that uses a similar grain bill. You can keep the carapils if you want, I use 1lb too. My only suggestions would be make the 60 minute Simcoe addition 0.5oz, and then your 1.4oz of Simcoe at 2 minutes would be 1oz. But I would also change those 2 minute...

    Ahh, thanks, seems obvious now. If the temperature is too high it will denature the beta amylase enzymes and there won't be enough of them left for further conversion by the time it drops down to their comfort level. I knew there had to be something that was escaping me.

    Is it ok to leave the hydrometer floating in the carboy for a couple days/weeks? Will it give an accurate reading the whole time?

    Thanks. With the LHBS closed all day today, will 36 hours after first pitch be a problem? I just checked and the first signs of fermentation have started, about 16 hours after first pitch.
