I am local to you ( I used to live 10 min from willi ) and brewed similar IPAS with my well water and had tons of hop aroma. I dont think its your water or your hops, i assume you are getting them from zoks.
Like others have mentioned it might be something in your process. Another thought is...
if its a mini fridge, there will be no room for a heater. you need to buy ferm wrap to wrap around your fermentation vessel
what will you be fermenting in?
Planning on brewing the current best clone on front page.
However I do not have hop shots nor simcoe hops.
Any input on using CTZ for bittering in place of hop shot and chinook in place of simcoe? I know it wont be as good of a clone, just thoughts on making a good beer.

if you do this:
1) Use oak cubes
2) do an initial soak in makers, dump the makers and then soak the cubes in more, after this you can dump the cubes and makers in the secondary. the first soak will extract tannins from the wood, found this out the hard way :(
i leave star san in my bev lines in between beers (could be a month or 2), have not noticed any degradation in the lines or any other issues (off tastes or anything like that). I use Ultra Barrier beer line FWIW
When creating/following a recipe you build it out, for example, with beersmith so you hit your targeted ABV with grain or extract. Let your fermentation finish out (test with hydrometer) and then just transfer to the keg. I personally wouldn't add sugar, seems redundant.
