    Too Much Blow Off

What size carboy are you using? I think you can get blowoff tubes that fit inside of the the entire mouth of the carboy. With your widened tubing, you'll get less back pressure. I use inch and half diameter tubing which fits inside the carboy. Haven't had any problems. Cheers

    alcohol heat after tast

I had a high fusel beer that I aged in room temperature for a few months to try and let the fusels mellow and had no luck. I have no experience storing it in cold, but my assumption would be that it would be slower to fade when temperature is in the 30's. I would keep it for as long as I...

    Stuck Fermentation on Big Brews

Are you transferring to a secondary? If so how quickly? What's your timeline like? A couple things you can try that might be of help. Wait to transfer to a longer time. That much sugar needs a long time for the yeast to process. Get a starter going with yeast nutrients to get the...

How do you create a recipe?

Do you use the BJCP guidelines? They've been invaluable to me in getting started creating recipes. BJCP 2008 Style Guidelines - Index That's my first go to. It gives you commercial examples which you can get recipes for, then go from there.

adding orange juice at the beginning of fermentation

You're better off squeezing it in after your primary fermentation is over. You don't have to transfer, but wait until all your grain sugars are fermented, then add the orange juice. There's about 1,000 pages on HBT documenting the advantages of fermenting fruit after primary fermentation is over.

Goose Island Bourbon County release on hold

Nice Revvy! Did you pick those up in MI? All places near me are out of regular BCS. And yes I should have clarified. When GI comes out with King Henry, Vanilla or Coffee BCS, and Bramble Rye, they generally limit you to one. However, it may be a little different outside of the immediate GI...

Goose Island Bourbon County release on hold

Yeah. Even in Chicago, they're gettable, but they generally limit you to one per customer. I was doing some thinking last night and my best guess as to why the beer has been delayed has to do with the installation of their new fermenters...

Goose Island Bourbon County release on hold

Good luck finding gumballhead. I live here and can't even get any. Alpha King, Pride and Joy, Robert the Bruce, and Arctic Panzer Wolf shouldn't be too hard to get though.

Goose Island Bourbon County release on hold

So GI was supposed to release bramble rye, vanilla bcs, and coffee bcs last week. At some point they told their distributors they weren't going to be shipping that week, but it would release soon. This week, from what I've gathered, the release is unknown, at least by anyone outside the...
