    get a thermapen, i have a collection of thermometers, digital and analog, they all callibrate fine at 32, and 212. they all read different at 154. i have three cdn proaccurate digitals that all read at least 4 degrees low at 154. i found out that only the thermapen, and my glass lab thermometer...

    go with the 1028, i have made that recipe with ringwood, and s-05. s-05 was very good, ringwood was REALLY fruity. i think of your choices, 1028 would be best

    I am not saying it is bad, just that maybe I expected more?:drunk: it is a good lawnmower beer for sure. I think my taste buds dislike the vienna malt. who knows? taste is very subjective.

    I would throw in a pack of dry yeast. just rehydrate to help start quicker. it should be fine.

    you'll notice the tannins, if they are there. it is a bitter-husky taste. you may have to keep the bottles cool for a while after carbing. the tannins will ease a little. overall you seem to have done a decent job, just relax. even if it turns out funky, its still beer. and at least you will...

    also, don't fret about the airlock bubbling, sometimes you will get that from a temperature differential after racking. there is also co2 in the beer that may off gas as you rack, regardless if it is done fermenting or not.

    you'll be fine, the notty yeast is a fast worker, so you aren't too early. racking into the secondary more than likely stirred up some yeast and it is still fermenting a bit. no worries about that. give it another week or so and then put it somewhere cool for another week. it should clear...

    that looks eerily familiar. and nice. I still use a cooler to mash though. but I have the burner set and plumbed for a third keggle. by the way, I am in shelby OH, about 1.5 hrs from you, maybe get together sometime.
