@jonmonho...no we didn't use the lid yeast. I brought over a pack of S04. Figured it'd be pretty safe to use.
I like to coriander idea. May give that a shot. If it's gonna end up with a watered down character the coriander might be a better option than dry hop.

While my batch that inspired this post was my first, my LHBS said I can essentially use anything I want. I read in some other posts here that people have used ale yeasts but I wanted to stay closer to the wine strains and went with the Cote de Blanc on the recommendation of the guy at the store...
Can anyone give me some input on the kits at Brew and Grow in St Louis Park vs the NB kits? NB has lots of reviews from far and wide whereas BnG has much less. I went in there today and the people seem nice as well as being closer to my home than NB. Just curious. Thanks all!
No trouble at all for me. Only took about 10min to throw together and my main influence was to get the 1g glass jug the juice came in. Half gallon of awesome organic juice for the kids and 1/2 gal for me :)

No bottles from the first batch were used in this new one. I used 12oz bottles for the last batch and pint bottles (except for the one 12oz I just opened) for this.

I did a 1gal Caribou Slobber kit a little while back that had bad soapy off flavors. I spoke with a trusted friend and the folks at Northern Brewer and both said the same thing, it sat on the yeast too long. And it was there for three weeks.

Just wrapped a 1gal NB Hefe kit. Well...about 1.5hr ago. All went well but I ended up with about .8gal wort in the fermenter post boil and OG was 1.054 which seems slightly high.
Should I leave it be or top it to 1gal with some tap water?
