    Sour cider/apfelwein questions

Cote de Blanc taste kind of rancid and buttery to me when used with apple juice. I tried it two times and did not like it either time. JMHO

    Krausen ??

72 AC controlled on the first floor. It smells and taste's great...like apple bread. I have never seen this and it is just weird?? since the first batch with the same yeast had no kraesen, it is odd. I will let it ferment through and see what happens, no odd smells and the fermenting is slowing...

    Krausen ??

    Krausen ??

I have never had this happen with apple juice from concentrate, but I have a huge krausen with this current batch. I reused the Nottingham yeast from the previous 5gl I bottled yesterday and when I went to whip it up this morning there was about a 5in krausen on top. The juice I always use is...

    Sassafras

I can almost always buy root's at my local Soulard farmers market in STL. I use it for tea and not brewing. If you have a large farmers market I would check there. If you do not have any luck shoot me a PM and I can get you some in the upcoming weeks. I can't imagine MO and WI being that...

    Sam's Choice Sparkling Cider

I have done both recipes and I have never waited more than 6 months for anything, other than my daughter. With this recipe you are adding more apple flavor at bottling, so you don't really have to wait for the apple flavors to develop. I am brewing both recipes, at present, but I prefer this...

    1 gal. lemonade

Maybe it is just luck or the Aldi frozen lemonade I use but I have never had problems getting my yeast going in my lemonade, I just hydrate it and stir it in. My airlock is usually going within 12 hours. This is what I have been using as a recipe...

Making hard cider from store-bought apple juice

I just use Walmart or Aldi brand juice and it all works out great. The stuff I got from Whole foods for 4 times the price was no better tasting... IMHO You do get the free glass jug though?? I have only done about 20-30 batches and maybe my taste buds aren't as keen as others..but I drink for...
