Check Brock's Homebrew from Melbourne Fl. I just brewed their Mojito Pale Ale (actually, it's a Kolsch) this weekend. They use Polaris Hops for the mint flavor and Motoueka (spelling?) for the Lime / Citrus flavors.
That'll be an interesting process development to follow for sure. There are already a ton of questions in my head about volatiles, tannins / husk remnants, etc. Besides, isn't brewing already a science experiment?
At least since it's using cavitation, it'll still be known as Suds though!
