How Potent is Killer Wine Yeast?

Never mind, it turns out RC212 is a neutral strain not a killer strain. So it should be no problem. :D Proving that sometimes it is better to be lucky than good!

    Ferm cap

I love the stuff. I use a couple drops when boiling my starter wort in an Erlenmeyer flask to prevent boil overs. I add a few drops to my boil kettle anytime it is full to within a few inches of the rim, also to prevent boil overs. I also add it to my carboys before fermentation starts...

How Potent is Killer Wine Yeast?

So I just split a batch of wort to make an Irish Red and a Flanders Red. For the Flanders I pitched RC212 to leave some fermentables for the Wyeast Roeselair I will add in secondary. For the Irish Red I just pitched rehydrated US05. Here is where I screwed up. I oxygenate after pitching...

High Gravity 2nd O2 dose, how to avoid a mess?

I'll bet it does. I have had success with the 12-18 hour oxygen addition in the past. I thought I was doing good pitching on a yeast cake that had just finished but the lack of lag time worries me as well.

High Gravity 2nd O2 dose, how to avoid a mess?

Yes, I *assume* that is what is causing it.

High Gravity 2nd O2 dose, how to avoid a mess?

On high gravity beers I have read it is beneficial to add a second dose of oxygen 12-18 hours after the yeast has been pitched (Yeast by White & Zainasheff). Last year I had a Barley Wine go from 1.103 to 1.017 with WLP007 using this technique. So today I brewed this years Barley Wine (OG...

Show us your sculpture or brew rig

It serves the same purpose as a sight tube. The rod has a groove turned in it that corresponds with each gallon in the kettle. The weight is held in place with a thumb screw, so it can be moved up and down the rod. I heat the wort as it comes into the boil kettle and by the time I have...

Show us your sculpture or brew rig

Here is my rig. It turns out the guy who owns my LHBS also runs a panel shop that makes control panels for all kinds of industrial applications. He was kind enough to let me use a work bench at his shop as well as any equipment I needed. Thanks JB! Anyhow, it is an E-HERMS controlled with a...

    Electric Heat Control?

I have done a lot of studying since I made my first post here and understand electric a little better than I did then. At the time I was just looking into making an electric kettle as inexpensively as possible. Since then my ambitions grew and with some funding from my now co-brewer brother, a...

    Electric Heat Control?

I want to turn my Keggle into an electric brew pot. I also want to be able to control the amount of power being put into the wort. I can build things and brew a decent beer but the finer points of electricity confuse me so I need some guidance. I live in the USA where our 220V power supply is...
