The recipe in the original post is just wrong. The grain bill was always supposed to have 1.25 lbs. of chocolate malt, not 0.5 lbs. The OG is...
Hey guys - wanting to brew a single IPA to showcase Galaxy hops, but since I'm not a big fan of single hopped beers and love Amarillo I came up with a Galaxy/Amarillo IPA. Any thoughts/feedback?

FED those recipes you posted, while they may be good, are nothing like Velvet Merlin at all. FW VM is 5.5% ABV and has no chocolate at all.
I think I'm going to try my hand at brewing a session IPA this weekend. Goal is to use up some leftover ingredients while making a sessionable hoppy ale.
Any thoughts on the following recipe? It's sort of "kitchen sink" but I think it should work out well:

The thing that bothers me about the Russian River .pdf recipe above is that the listed OG and FG don't make a beer of the ABV they state.
If you started at 1.070 and ended at 1.011 as they indicate you would get a beer with 7.74% ABV, not the 8-8.5% they list.

Interested in these as well, saw them on Rebel Brewer today. Guess I'll have to pick some up - particularly interesting in the Bohemian Lager strain. All are $3.99 per pack on the Rebel Brewer site.
I love WLP002 but have only used WLP005 a couple times. If memory serves me correctly you definitely want to do a Diacetyl rest with 005, and it produces more esters than 002.
Awesome build! Beginning a Brutus like build myself soon. Whats the reasoning behind the huge MLT? Ive seen people use 15g HLT and MLT and go with a bigger 20g BK, but not a bigger MLT. Just curious.

The reason for boiling the water is to remove the dissolved oxygen (no oxygen = inactive yeast). People throw the jars in there to sanitize them at the same time (two birds, one stone).
You could definitely sanitize the jars with StarSan if you wanted, it would work fine.
