What a small world. I was a crew chief on the KC-135R for six years at Robins AFB Ga, but got out two years ago to learn how to fly. If you enjoy wenching you'll like being an A&P, by far the best type of mechanic to be.

If the carboy is in a dark closet or at least out of sun light than there is no need to cover. Most people will cover even with indirect sunlight. (Myself included)

The amount of water you steep your grains in does not make a difference, but the temp does.
So hold your temp at 155* for X amount of time then take the grains out and ramp up the heat for the boil:rockin:
